Kenai Original Recipe

Kenai Premier BBQ Vegetarian Chili


4 Tbsp canola oil

3 cups chopped yellow onion

2 cups chopped red bell peppers

4 Tbsp chopped garlic

4-6 jalapenos diced

2 medium zucchini small dice

4 cups fresh corn kernals

3 lbs Cremini mushrooms diced and cubed

4 Tbsp chili powder

2 Tbsp ground cumin

2.5 tsp salt

.5 tsp cayenne

4 large tomatoes peeled, seeded, and chopped

6 cups pinto, black, and red kidney beans

1 28oz can crushed tomatoes

1 cup veggie stock

1.5 cups Kenai Premier BBQ Sauce




In a large stockpot, heat oil. Add onions, bell peppers, garlic, and jalapenos. Cook over medium heat until soft. Add zucchini, corn, and mushrooms. Cook, stirring until soft and liquid is released, and veggies turn a little golden.

Add spices.

Add tomatoes, beans, crushed tomatoes, veggie stock, and the best tasting thing in the world, Kenai Premier BBQ Sauce. 

Bring to a boil. Simmer at medium low for 30-40 minutes.

*Top with fritos, sour cream, grated chesse, and love.
